Confession: I had been living without an oven for about 5 years. I haven’t thought it was THAT needed, to be honest. Well, you don’t miss it when there’s no option, right? But when I look back, I’m banging my head against the wall (figuratively, no worries) and now I understand all those I-can’t-believe-this stares from people that I mentioned this to at that time.
To try maintain a healthy diet and not having an oven is not fun, I’m not going to lie. Veggies just taste like veggies and for example cooked broccoli was definitely never on my top list. Oven is like this weird box where you put in something that’s kinda un-exciting and then in 20 minutes you take out magic. Magic like glitters sprinkled everywhere. Everything is better with an oven. Except for celery (tried that, nope!).

Anyway, let’s skip to current times when I (and you with me!) can enjoy: delicious gluten free (that means guilty free, right?!) Banana Bread that I’m having at least once a week (and for example now, at 7 pm as I’m writing this article and having my fourth slice topped with my Chia Seed Jam), or addictive Brussels Sprouts with Sweet Potatoes that I eat with just about everything (I enjoyed them with salmon today, yum!). And this new addition: Cheesy Roasted Broccoli!
Cheesy Flavor without any Actual Cheese in?
Instead of your classic cheese, there’s nutritional yeast. It contains huge amount of protein, vitamins, minerals and is like this cheap and underrated superfood. More about it here. It has nice and cheesy flavor and therefore is amazing for vegans or anyone intolerant to milk (me).
I use nutritional yeast even on pasta if I crave cheesy sauce. I just mix nutritional yeast with olive oil and voilá, done!
Back to the Roasted Broccoli
You can have this Cheesy Roasted Broccoli with everything you can imagine. Tofu, meat, fish, etc. Recipe is also good for anyone who hates this veggie, because trust me, with nutritional yeast added to the game, you cannot NOT love this dish. Well, technically side dish.
Cheesy Roasted Broccoli without Cheese
Roasted Broccoli with an awesome cheesy flavor without any actual cheese added (therefore awesome option for vegans and anyone intolerant to milk).
- 1 bunch broccoli
- 4 tablespoons extra virgin olive oil
- 3 tablespoons nutritional yeast
- sea salt and freshly ground pepper to taste
- Preheat oven for 400 degrees F | 200 degrees C.
- Cut broccoli into florets.
- Mix olive oil and nutritional yeast until paste is formed.
- Toss the florets with the paste (try to cover every piece using your hands) add salt and pepper to taste.
- Bake for about 20 minutes until the stems are tender.
